very very broad and almost none of them apply to me.

How do we remove them all and customise this?

Currently, we supply these categories out of the box.
We have considered adding a possibility to create your own custom taxonomy (in addition to the existing categories).

I agree, I cannot even start using this until categories can be changed. Seems promising but changing categories is just a basic function.
